Since 2001, when I was first introduced to shopping at a health food store, I have met passionate people in the industry and have become more educated about the food that makes it to our dining table and the hard workers that produce it. With time, patience, and a little trial and error, this lifestyle was comfortable and easy. Making the transition from shopping at the nearest franchise grocery store to supporting mostly local markets and producers can seem like a daunting task without the right tools. If you do it right, you can actually save money, consume fresher produce, support your local economy, and become deeply connected to your community. This is a lifestyle change! Without the right resources at your disposal the work may appear to outweigh the benefits. Fortunately there is a community of people just waiting to show you the way. This local food guide is your map. Use it to find the people, food, and places you wish to attract in your life.

Find info about farmers’ markets in your region, their days and hours of operation and the vendors in attendance by visiting www.albertamarkets.com. In the southern region surrounding Calgary they have seventeen markets listed. Information about events is also found on this Web site. Summer Harvest Muffins

Ingredients:
1/2 cup         Vital Green Farms Organic Milk
1/2 cup         Community Natural Foods Organic Apple Cider
1/4 cup         Highwood Crossing Oil
1/2 cup         Chinook Honey
1 large          farm fresh egg (beaten)
1 tsp             natural vanilla extract
1/2 cup         fresh seasonal berries
2 cups          Highwood Crossing Muffin Mix
2 tsp             cinnamon

Method:
Pre-heat oven to 400 degrees Fahrenheit. Combine the first six ingredients with a whisk. Stir in berries and add muffin mix with cinnamon. Bake for twenty minutes in greased or lined muffin tins. Makes twelve muffins. (If baking mini-muffins, bake for only seventeen to eighteen minutes.)

Berry Freezing Tip:

Spread berries evenly on a baking sheet and place in the freezer for one to two hours. Once they’ve started to harden, place them in containers, date, and re-freeze. This pre-freeze prevents them from turning into one big berry block. You can enjoy those strawberries in smoothies and desserts all the way through winter. Yogurt tubs make perfect storage containers.

Yogurt Freezes

This is a refreshing healthy summer treat with many options through the growing season. Either purée fruit with yogurt in a blender or simply mash the fruit and add the yogurt. Use plain or vanilla yogurt. Use maple syrup, honey, or stevia to sweeten. Lemon or lime juice will add a more tangy taste. Other flavour options include chopped nuts, coconut flakes, carob or cocoa powder. To increase the health benefits add Highwood Crossing flax oil. Pour combinations into popsicle containers or freezable cups with a popsicle stick.

Ingredients:


Summer Berry
1.5 cups         fresh mixed berries
1 Tbls            maple syrup
1 cup             yogurt

Peaches and Cream
1.5 cups        peeled ripe peaches
1/2 tsp           honey
1/2 tsp           lemon juice
1 cup             yogurt

Apple Sunrise
1 cup             fresh pureed apples
2 tsp              honey
1/8 tsp           cinnamon
1 cup             yogurt
